4D/4N Hong Kong - Macau: HKIA to Macau (other alternatives to Sky Pier)

Hi!

My family and I (4 adults and 1 teenager) will be arriving in HK on May 31 (Thurs) at 9:55AM via Cebu Pacific. We will start our vacation by going directly to Macau from HKIA (overnight stay). I would like to request for a detailed instruction on how to reach the Macau Ferry Terminal from HKIA (via Bus or MTR). I have read the previous posts re the use of SkyPier to go to Macau. However I'm quite concerned that we might not be able to do so as we have check in luggage and Cebu Pacific is not among the listed airlines with direct transfer of luggage to the SkyPier.

I would also like to request your opinion on our itinerary for the next 3 days.

On our second day, June 1 (Fri), we will try to get the earliest ferry back from Taipa/Macau to Hong Kong. We have reserved a room at the Cosmic Guesthouse. Which ferry terminal is closest to our hostel? We are planning to leave our luggage at the hostel and go straight to Ocean Park then Victoria Peak and Madame Tussaud's. If time permits, we will try to ride a ferry back to TST just in time for the SOL.

On our third day, June 2 (Sat), we will start early and go to Ngong Ping then Citygate then Disneyland (until fireworks). Are there cheap food outlets that is open early for breakfast along the way to Ngong Ping from the hostel? After the fireworks at Disneyland, is it feasible to squeeze in night market shopping around the TST area? What night markets are near to our hostel?

On our fourth day, June 3 (Sun), we plan on strolling around some of the attractions around the TST area then go to Stanley Market as it is far (?) from our hostel and it closes quite early (up to 6pm only). After lunch we will go back to TST go around Avenue of the Stars, Clock Tower, Nan Lian Gardens, Hong Kong Space Museum, Goldfish Market, Fa Yuen Street Market, SOL (if no time permits during our second day) and finally Night Market / Ladies Market (whew!). Are there any other places we've missed?

We will depart HK on June 4 (Mon) at 9:45AM. How many hours before the flight should we be at the airport? What will be the most efficient and easiest way to reach the airport?

What do you think of our itinerary? I know it's quite ambitious but it's my family's first time to go abroad and to visit HK/Macau. We would like to maximize our stay in HK and absorb the sights, taste and sound of everything.:)
