itinerary for 3 full days hong kong and macau

Hi!
My family (6 adults) booked a flight to Hong Kong next year (March). :) This is our first time to travel abroad so I am planning every detail of our tour this early (we don’t want to get lost..hehe) and we like to maximize our stay.
We will be arriving at Hong Kong airport at 7pm (Saturday) and were planning to stay at HK Tai San Guest House.
Could anyone help me on the specific directions for these attractions, travel time, places to go in Macau, affordable places to eat, and please comment/suggest if our itinerary is possible? thanks a lot! :)
SATURDAY
7:00 pm arrived at HK airport
8:30 pm arrived at HK Tai San Guest House (will be riding a bus)
9:00 pm Possible attractions/markets near the Guesthouse (ANY SUGGESTIONS?)
SUNDAY
6:30 am Off to Macau
6:30 pm go back to HK
7:30 pm Avenue of Stars & Victoria Harbour , watch symphony of lights
8:30 pm to guest house (or is it possible to go to nearby markets?)
MONDAY
7:30 am off to Ngong Ping 360
10:00am to 1:30 Ngong ping village, Giant Buddha (cable car ride)
1:30pm Off to Disneyland
2:00pm Hong Kong Disneyland (watch fireworks show)
9:00 pm Go back to the guesthouse
TUESDAY
8:00 am Off to Ocean Park (should we check out from the guesthouse?)
This is my other concern... I don't know how many hours should we allot for the Ocean Park (last day). Considering that we needed to go back to the guesthouse to pick up our things and the travel time to the airport. Our flight is 7:30 pm (Tuesday). And lastly, can we add the Victoria Peak in our itinerary?
