2nights Macau/2nights Hong-Kong

My family (5 adults) booked a flight to Macau-HongKong on December 15 -19, 2012. This is our first time to travel abroad so I am planning every detail of our tour this early and we like to maximize our stay. Is it advisable for us to get into a tour packages?

We will be arriving at Macau airport on December 15, 2012 at 9pm. Still don't have a hotel to stay. Which Hotel would you recommend to stay in Macau for 2 nights?
And places to go in Macau?

On December 17 after breakfast, we will go to Hongkong by Star Ferry.

Still don't have hotel to stay in Hongkong. What would you suggest?

During our HK stay we want to Visit the following Attractions:
-DisneyLand
-Madame Tussauds (Victoria Harbour/Peak at night)
-Ocean Park
-Tsing Ma Bridge
-Wetland Park
-Tai Tam Park
-Lamma Island
-Jumbo Kingdom
-Avenue of Stars
-Sky Terraces
-Star ferry
- Symphony of Lights
- Shopping places (ex. ladies night market Mongkok)
-Ngong Ping 360 Cable car (lantau island)
-Giant Buddha
-TST Museums ( space museums, museum of arts, science museum, HK museum of history)

Please suggest length of stay, fare involve and the best way to reach in the said area.
By the way, our flight is 9:45PM on December 19, 2012 at HK international Airport.
